  • 4 slices country bread Choose a hearty loaf for a satisfying crunch.
  • 4 oz. Kerry Gold Cheddar or Dubliner cheese sliced
  • 2 tablespoons apricot (or other fruit) jam Adds a sweet contrast to the savory cheese.
  • 1 tablespoon Kerry Gold salted butter For that perfectly golden and crispy crust.
  • 1/4 cup arugula Provides a fresh and peppery bite to the sandwich.

Method
 

Instructions:
  1. Begin by gathering all your ingredients. Slice the cheese if it isn’t pre-sliced, and have your apricot jam ready to go. Also, rinse your arugula under cold water and pat it dry with a paper towel.
  2. Spread a generous amount of Kerry Gold salted butter on one side of each slice of country bread. This will create a beautifully crispy exterior once grilled.
  3. On the unbuttered side of two slices, spread one tablespoon of apricot jam evenly. Layer with slices of Kerry Gold cheese, followed by a handful of arugula. Top with the remaining slices of bread, buttered side facing out.
  4. Place your skillet or griddle over medium heat. Allow it to warm up for a few minutes to ensure an even cooking temperature.
  5. Once the skillet is heated, carefully place your assembled sandwiches in the pan. Cook for about 3-4 minutes or until the bottom is golden brown. Use a spatula to gently press down the sandwich for an even melt.
  6. Using the spatula, carefully flip the sandwiches over. Cook for another 3-4 minutes until the other side is golden and the cheese is thoroughly melted.
  7. Once cooked to perfection, remove the sandwiches from the skillet. Allow them to cool for a minute before slicing in half. Serve immediately and enjoy the delightful combination of flavors!

Notes

  • Feel free to mix and match your favorite cheeses; Gruyere or Gouda would also work beautifully.
  • For a gourmet touch, consider adding thinly sliced prosciutto or turkey for added protein.
  • Make sure your butter is at room temperature for easier spreading.
  • If you want an extra crispy crust, sprinkle a bit of garlic powder on the butter before grilling.
