Ingredients
  

  • 3 tablespoons apple juice (not from concentrate)
  • 2 tablespoons tahini paste
  • 2 tablespoons fresh cilantro (packed)
  • 1 tablespoon fresh mint (packed)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sea salt
  • 1 cup carrot (grated)
  • 2 cups spinach (finely chopped)
  • 1 cup cauliflower (grated)
  • 1/2 cup apple (diced)
  • 1/2 cup golden raisins
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1 pinch ground black pepper

Method
 

  1. Start by gathering all the ingredients listed above. Rinse your fresh produce under cold water and pat them dry. Grate the cauliflower and carrots using a grater or food processor. Chop the spinach finely, and dice the apple into small pieces.
  2. In a small mixing bowl, combine the apple juice, tahini paste, lemon juice, 1/2 teaspoon of sea salt, and pinch of ground black pepper. Whisk until the mixture is smooth and well combined.
  3. In a large mixing bowl, add the grated cauliflower, grated carrots, chopped spinach, diced apple, golden raisins, and the fresh herbs – cilantro and mint. Sprinkle in the ground cumin for an added layer of flavor.
  4. Pour the dressing over the salad mixture. Using a spatula or wooden spoon, gently fold the dressing into the salad until everything is evenly coated.
  5. Take a moment to taste your Healthy Grated Cauliflower Salad. Feel free to adjust the seasoning, adding more salt or lemon juice according to your preference.
