  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

  • 1-1/2 cups milk plant-based or any milk works
  • 2 teaspoons minced garlic
  • 1/4 cup all-purpose flour
  • 2-1/2 cups penne pasta (8 ounces)
  • 2 tablespoons unsalted butter
  • 12 ounces frozen corn
  • 2 cups frozen broccoli florets coarsely chopped
  • 9 ounces smoked chicken sausage pre-cooked, cut into half moons
  • 1/2 cup Parmesan cheese
  • 1/2 cup fresh basil or fresh basil pesto (optional)

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C). In a large pot, boil salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Step 2: In a skillet, melt the unsalted butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the flour, whisking continuously for 1-2 minutes until it turns golden.
  3. Step 3: Slowly pour in the milk while whisking to avoid lumps. Continue stirring until the mixture thickens. Season with Italian seasoning, onion powder, garlic powder, red pepper flakes, salt, and pepper.
  4. Step 4: Once the sauce is ready, fold in the drained sweet yellow corn, frozen corn, chopped broccoli, and smoked chicken sausage. Add the cooked pasta to the skillet and mix until well coated in the sauce.
  5. Step 5: Transfer the pasta mixture to a greased baking dish. Sprinkle Parmesan cheese evenly over the top.
  6. Step 6: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
  7. Step 7: Once out of the oven, let it cool for a few minutes. If desired, garnish with fresh basil or a dollop of basil pesto before serving. Dig in and enjoy your delicious Healthy Pasta Bake!
