Healthy Pop Tarts

Ingredients
  

  • 1 batch Greek yogurt dough
  • 2 tablespoons sugar (see notes)
  • 1/2 cup strawberry jam (or any jam or jelly of choice)
  • 2 tablespoons milk
  • 1/2 cup powdered sugar
  • 2 tablespoons Greek yogurt (see notes)
  • 1/2 teaspoon vanilla extract

Method
 

  1. In a mixing bowl, combine your Greek yogurt dough ingredients. This dough is the foundation of your Healthy Pop Tarts and will provide a flaky texture once baked.
  2. Once your dough is mixed, place it on a floured surface and roll it out until it’s about 1/4 inch thick. Use your rolling pin to ensure an even thickness for consistent baking.
  3. Using a sharp knife or a pastry cutter, cut the rolled dough into rectangles. Aim for sizes that resemble traditional Pop Tarts, around 3x4 inches.
  4. On half of the dough rectangles, spoon about 1 tablespoon of your chosen jam in the center. Be careful not to overfill, as this can cause the filling to spill out during baking.
  5. Place another dough rectangle over the jam-filled ones. Using a fork, crimp the edges to seal them tightly. This step is essential for keeping the filling inside while they bake.
  6. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and place your prepared Pop Tarts on it. Bake for about 15-20 minutes, or until they are golden brown.
  7. While the Pop Tarts are baking, mix together the powdered sugar, milk, Greek yogurt, and vanilla extract in a small bowl. Adjust the consistency with more milk if needed until you reach a drizzle-able texture.
  8. Once the Pop Tarts have cooled for a few minutes, drizzle the icing over the top. Feel free to use a spoon or a piping bag for a more decorative touch.
  9. Let the icing set for a few minutes, then it’s time to dig in! These Healthy Pop Tarts can be enjoyed warm or at room temperature.

Notes

  • For a fun twist, try different jam flavors or fillings.
  • These can be stored in the fridge for up to 5 days.
  • Freeze for up to 3 months; separate layers with parchment paper.
