Ingredients
  

  • 3 tablespoons butter at room temperature
  • 2 tablespoons chopped fresh Italian parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh dill
  • to taste Salt and freshly ground black pepper
  • 4 ounces fish fillets (salmon, cod, halibut, or trout)
  • Lemon wedges for serving (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the butter, parsley, thyme, dill, salt, and pepper. Mix well.
  3. Cut sheets of parchment paper into large rectangles, about 12x16 inches.
  4. Place a fish fillet in the center of each parchment sheet. Spread a generous amount of herb butter over each fillet.
  5. Fold the parchment paper over the fish, creating a half-moon shape. Seal the packet tightly.
  6. Place the packets on a baking sheet and bake for about 15-20 minutes.
  7. Carefully open the packets and serve with lemon wedges.
