  • 1 teaspoon cinnamon
  • 1 cup cold unsalted butter cut into even cubes
  • ¼ cup honey

  1. Step 1: Combine Dry Ingredients - In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, dark brown sugar, salt, and cinnamon until well combined.
  2. Step 2: Add the Butter - Add the cold, cubed unsalted butter to the bowl. Using a pastry cutter or a fork, cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Step 3: Mix in the Honey - Pour in the honey and mix until the dough starts to come together. Add cold water if the mixture seems too dry.
  4. Step 4: Chill the Dough - Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Step 5: Roll Out the Dough - Preheat your oven to 350°F (175°C). Roll out the chilled dough to about ¼ inch thickness.
  6. Step 6: Cut the Crackers - Use a cookie cutter or knife to cut the dough into shapes and place them on a baking sheet lined with parchment paper.
  7. Step 7: Bake - Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
