Method: Homemade Steak Seasoning & Garlic Herb Butter Steaks
- Step 1: Prepare the Homemade Steak SeasoningIn a small bowl, combine the kosher salt, garlic powder, paprika, brown sugar, onion powder, coriander, cumin, oregano, black pepper, and ancho chili powder. Mix well until all the spices are evenly distributed.
- Step 2: Season the SteaksTake your top sirloin steaks and pat them dry with paper towels. This step is crucial for achieving a nice crust. Drizzle a bit of olive oil over each steak and rub it in. Generously sprinkle your homemade steak seasoning on both sides of the steaks, making sure to press it into the meat.
- Step 3: Make the Garlic Herb ButterIn a mixing bowl, combine the room temperature butter, lemon zest, lemon juice, Dijon mustard, and finely minced parsley (or your herb combination). Use a whisk to blend everything together until it’s well incorporated. Set aside.
- Step 4: Sear the SteaksHeat a large skillet over medium-high heat. Add the vegetable oil and let it heat until shimmering. Carefully place the seasoned steaks in the skillet. For added flavor, throw in the whole garlic cloves. Sear the steaks for about 4-5 minutes on one side without moving them. This will help develop a beautiful crust.
- Step 5: Flip and Finish CookingUsing tongs, flip the steaks and continue cooking for an additional 4-5 minutes for medium-rare, adjusting the time based on your preferred doneness. If you have a meat thermometer, aim for an internal temperature of about 130°F for medium-rare.
- Step 6: Add the Garlic Herb ButterOnce the steaks are cooked to your liking, remove them from the skillet and place them on a cutting board to rest for about 5-10 minutes. During this time, place a dollop of garlic herb butter on top of each steak. The heat from the steak will melt the butter, creating a delicious sauce.
- Step 7: ServeSlice the steaks against the grain and serve them topped with the remaining melted garlic herb butter. Pair with your favorite side dishes for a complete meal.
