Preheat your oven to 325°F (165°C).
Line a large baking sheet with parchment paper.
In a large mixing bowl, combine the honey, solid coconut oil, ground cinnamon, salt (if using), and vanilla extract. Stir until well combined and the coconut oil is melted.
Add the rolled oats, rinsed quinoa, chopped almonds, and flaked coconut to the wet mixture. Mix everything together until fully coated.
In a small bowl, beat the egg white until frothy. Add to the granola mixture and stir until evenly coated.
Pour the granola mixture onto the prepared baking sheet and spread it into an even layer. Press down slightly.
Bake for 25-30 minutes, stirring halfway through until golden brown and fragrant.
If using dried fruits, let the granola cool for 10 minutes then gently mix in.
Let the granola cool completely on the baking sheet, then break into clusters and store in an airtight container.
