In a medium saucepan, combine the 3 cups of chicken broth, 1 teaspoon of olive oil, and 1/2 teaspoon of sea salt. Bring this mixture to a boil over medium-high heat.
Once the broth is boiling, remove the saucepan from heat and stir in the 1 1/2 cups of couscous. Quickly cover the pot with a lid and let it sit for about 5 minutes.
After 5 minutes, uncover the pot and use a fork to fluff the couscous gently.
Add the 1 teaspoon of cayenne pepper, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of saffron to the couscous. Stir well to combine.
In the same saucepan, add the 2 tablespoons of unsalted butter and 1 cup of mixed vegetables. Stir to incorporate everything evenly.
Once the vegetables are cooked to your liking, give the couscous one last fluff with a fork and it’s ready to serve!
