How To Cook Couscous

Ingredients
  

  • 1.5 cups couscous
  • 3 cups chicken broth
  • 1 teaspoon olive oil
  • 0.5 teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon saffron
  • 2 tablespoons unsalted butter or olive oil if preferred
  • 1 cup mixed vegetables suggest zucchini, bell pepper, carrots, and peas

Method
 

  1. In a medium saucepan, combine the 3 cups of chicken broth, 1 teaspoon of olive oil, and 1/2 teaspoon of sea salt. Bring this mixture to a boil over medium-high heat.
  2. Once the broth is boiling, remove the saucepan from heat and stir in the 1 1/2 cups of couscous. Quickly cover the pot with a lid and let it sit for about 5 minutes.
  3. After 5 minutes, uncover the pot and use a fork to fluff the couscous gently.
  4. Add the 1 teaspoon of cayenne pepper, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of saffron to the couscous. Stir well to combine.
  5. In the same saucepan, add the 2 tablespoons of unsalted butter and 1 cup of mixed vegetables. Stir to incorporate everything evenly.
  6. Once the vegetables are cooked to your liking, give the couscous one last fluff with a fork and it’s ready to serve!

Notes

  • Store in an airtight container in the refrigerator for up to 4 days.
  • For freezing, ensure it's cooled before placing in a freezer-safe container.
  • Pair with grilled chicken or a fresh salad for a complete meal.
