Ingredients
  

  • 2 cups almond flour ground
  • 2 whole eggs room temperature, separated
  • 2 whole egg whites room temperature
  • 3 tbsp psyllium husk powder
  • 1/2 cup hot water
  • 2 teaspoons baking powder
  • 1/4 teaspoon xanthan gum
  • pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, psyllium husk powder, baking powder, xanthan gum, and salt. Whisk together until evenly mixed.
  3. Separate the egg yolks from the egg whites. In a separate bowl, beat the egg whites until they form stiff peaks.
  4. In another bowl, combine the egg yolks and hot water. Stir until well combined.
  5. Pour the wet mixture into the dry ingredient bowl. Mix until a dough forms. Gently fold in the beaten egg whites until everything is well incorporated.
  6. Using your hands, divide the dough into equal portions and shape them into rolls.
  7. Place the shaped rolls on a baking sheet lined with parchment paper. Bake for about 25-30 minutes or until golden brown on top.
  8. Once baked, remove the rolls from the oven and let them cool on a wire rack for a few minutes. Serve warm with butter.

  • Store in an airtight container to maintain moisture.
  • Refrigerate for up to a week for longer storage.
  • Freeze for up to a month; thaw and reheat when ready.
