  • 1 handful fresh mint leaves (10g)
  • 1 whole avocado
  • 1 whole fennel bulb (50g) or 1 celery stick
  • 1 small cucumber (100g)
  • 1 tablespoon protein powder (unsweetened)
  • 1 cup almond milk (240ml, unsweetened)
  • 1 tablespoon almond butter
  • 1 whole lemon (juice)

  1. Step 1: Prepare the Ingredients. Begin by washing your kale and mint leaves thoroughly. If you’re using a fennel bulb, slice off the top and bottom and chop it into smaller pieces. If you opted for a celery stick, cut it into smaller chunks. Peel and pit the avocado, and chop the cucumber into chunks for easy blending.
  2. Step 2: Add Ingredients to Blender. In your blender, combine the kale, fresh mint leaves, avocado, chopped fennel or celery, cucumber, protein powder, almond milk, almond butter, and the juice of one lemon.
  3. Step 3: Blend Until Smooth. Blend on high speed until all the ingredients are well combined and the mixture is smooth. If the smoothie is too thick, add more almond milk to achieve your desired consistency.
  4. Step 4: Taste and Adjust. Give your smoothie a taste. If you prefer it sweeter, add a bit of stevia or a low-carb sweetener of your choice. Blend again to combine.
  5. Step 5: Serve and Enjoy. Pour the smoothie into a cup or jar, and enjoy immediately! You can also garnish it with a sprig of mint or a slice of cucumber for an extra touch.

Notes

  • For an extra boost of antioxidants, consider adding a scoop of spirulina or matcha powder.
  • If you’re not a fan of kale, spinach is a great alternative.
  • Adjust the thickness of your smoothie by varying the almond milk.
  • Add chia seeds or hemp seeds for added nutrition.
