Begin by combining the shredded mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave them for about 30 seconds, then stir. Repeat until the cheeses are fully melted and combined.
In a separate mixing bowl, whisk together the almond flour, garlic powder, and baking powder until evenly combined.
Add the melted cheese mixture to the dry ingredients. Next, add the beaten egg. Use a spatula to mix until a dough forms.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Divide the dough into four equal portions and shape each into a round bun.
Brush the tops of the buns with the extra beaten egg and sprinkle sesame seeds on top if desired.
Place the shaped buns on the prepared baking sheet and bake for 12-15 minutes or until golden brown.
Once baked, let the buns cool on a wire rack. They will firm up as they cool.
