  1. Step 1: Prepare the Pan - Start by lining a 9x9 inch baking pan with parchment paper. This will help you remove the bars easily once they are set.
  2. Step 2: Melt Coconut Oil - In a small saucepan or microwave, melt ¼ cup of coconut oil. If using the microwave, heat it in 30-second intervals until fully melted.
  3. Step 3: Mix Peanut Butter and Coconut Oil - In a large mixing bowl, combine the melted coconut oil with 1 cup of creamy peanut butter. Stir until smooth and well combined.
  4. Step 4: Add Dry Ingredients - To the peanut butter mixture, add 1 cup of superfine almond flour, ¼ cup of coconut flour, and ½ cup of powdered erythritol. Mix until fully incorporated.
  5. Step 5: Incorporate Vanilla - Add 1 teaspoon of vanilla extract to the mixture and stir until everything is well blended.
  6. Step 6: Press Into the Pan - Pour the mixture into the prepared baking pan. Use a spatula to press it down evenly, ensuring there are no gaps.
  7. Step 7: Melt and Add Chocolate Chips - In a double boiler or microwave, melt 1 cup of sugar-free chocolate chips along with the remaining ¼ cup of coconut oil. Stir until smooth. Drizzle the melted chocolate over the peanut butter layer, spreading it evenly.
  8. Step 8: Chill - Place the pan in the refrigerator for at least 2 hours, or until the bars are firm and set.
