Ingredients
  

For the Crust:
  • 1.5 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter melted
For the Filling:
  • 1 can sweetened condensed milk 14-ounce
  • 1/2 cup key lime juice
  • 1/2 teaspoon vanilla extract
  • 4 ounces cream cheese softened
  • 4 large egg yolks
  • 1 pinch kosher salt
  • 1 tablespoon lime zest
  • 1 serving Whipped cream for garnish (optional)

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted unsalted butter and mix until the crumbs are fully coated. Press into the bottom of your greased 9x9-inch baking pan. Bake for 8-10 minutes until golden.
  3. Step 3: In a separate bowl, beat the softened cream cheese until smooth. Gradually add the sweetened condensed milk, then mix in the key lime juice, vanilla extract, egg yolks, lime zest, and kosher salt. Whisk until smooth.
  4. Step 4: Pour the filling over the pre-baked crust. Bake for 20-25 minutes until the filling is set but slightly jiggly in the center. Let cool at room temperature, then refrigerate for at least 3 hours.
  5. Step 5: Cut into squares, serve with whipped cream if desired, and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze wrapped tightly for up to 2 months for longer storage.
  • Thaw frozen bars in the refrigerator before serving for the best taste.
