Start by taking your rack of lamb. Using a sharp knife, cut between the bones to separate the lamb into individual chops.
In a mixing bowl, combine the finely chopped rosemary, parsley, and garlic. Add the olive oil and mix well to create a paste.
Heat your skillet or grill over medium-high heat.
Once the skillet or grill is hot, place the lamb chops on it. Cook for about 3-4 minutes on each side for medium-rare.
Once cooked to your desired doneness, remove the lamb chops from the heat and let them rest for 5 minutes.
Arrange the lamb chops on a platter, garnish with additional parsley if desired, and serve immediately.
