  • 2 pounds rack of lamb separated into 1-pound pieces
  • 1 tablespoon fresh rosemary finely chopped
  • 2 tablespoons flat-leaf parsley finely chopped
  • 3 cloves garlic finely chopped
  • 1 tablespoon extra-virgin olive oil

Method
 

  1. Start by taking your rack of lamb. Using a sharp knife, cut between the bones to separate the lamb into individual chops.
  2. In a mixing bowl, combine the finely chopped rosemary, parsley, and garlic. Add the olive oil and mix well to create a paste.
  3. Heat your skillet or grill over medium-high heat.
  4. Once the skillet or grill is hot, place the lamb chops on it. Cook for about 3-4 minutes on each side for medium-rare.
  5. Once cooked to your desired doneness, remove the lamb chops from the heat and let them rest for 5 minutes.
  6. Arrange the lamb chops on a platter, garnish with additional parsley if desired, and serve immediately.

  • Use a meat thermometer to ensure lamb is cooked to your liking.
  • Feel free to experiment with other fresh herbs like thyme or oregano.
