Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cubed chicken breast, salt, and lemon pepper. Toss to coat evenly.
Add the chicken broth, white rice, lemon juice, melted butter, lemon zest, minced garlic, onion powder, dried basil, pepper, and thyme. Stir until combined.
Transfer the mixture to a casserole dish, spreading it out evenly. Arrange lemon slices on top.
Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes.
