Ingredients
  

  • 1 pound cubed boneless skinless chicken breast
  • 1 teaspoon salt
  • 2 teaspoons lemon pepper
  • 2 cups chicken broth
  • 1 cup white rice
  • 3 tablespoons lemon juice freshly squeezed
  • 3 tablespoons melted butter
  • 1 tablespoon lemon zest
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 lemon thin slices for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cubed chicken breast, salt, and lemon pepper. Toss to coat evenly.
  3. Add the chicken broth, white rice, lemon juice, melted butter, lemon zest, minced garlic, onion powder, dried basil, pepper, and thyme. Stir until combined.
  4. Transfer the mixture to a casserole dish, spreading it out evenly. Arrange lemon slices on top.
  5. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes.
  6. Let cool for a few minutes before serving. Enjoy warm!

Notes

  • For a gluten-free version, substitute white rice with cauliflower rice.
  • Make it vegetarian by replacing chicken with chickpeas and using vegetable broth.
  • To make it extra creamy, stir in cream cheese before baking.
