  • 1.5 lb chicken breast (2 large, patted dry with paper towels)
  • 1 Tbsp olive oil (to sauté)
  • 1 Tbsp parsley (to garnish, optional)
  • 0.5 lemon lemon (sliced for garnish, optional)
  • 2 large eggs
  • 1 clove garlic (minced)
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 1 cup Parmesan cheese (grated)
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 cloves garlic (minced)
  • 0.25 cup lemon juice
  • 0.25 cup chicken broth
  • 0.25 tsp ground black pepper

Method
 

Instructions:
  1. Step 1: Prepare the Chicken - Start by patting the chicken breasts dry with paper towels. This step is crucial for achieving a nice sear. Season both sides with salt, pepper, and Italian seasoning.
  2. Step 2: Dredge in Cheese and Flour - In a shallow dish, whisk together the eggs. In another dish, combine the grated Parmesan cheese and flour. Dip each chicken breast into the egg, allowing the excess to drip off, then dredge it in the cheese and flour mixture, pressing gently to adhere.
  3. Step 3: Sauté the Chicken - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. Step 4: Make the Lemon Butter Sauce - In the same skillet, add the unsalted butter. Once melted, add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the lemon juice and chicken broth, scraping any brown bits from the bottom of the pan for extra flavor. Let the sauce simmer for a minute or two.
  5. Step 5: Combine and Serve - Return the chicken to the skillet, spooning the sauce over the top. Let it cook for an additional minute to heat through. Garnish with fresh parsley and lemon slices if desired.

  • For a dairy-free option, substitute Parmesan cheese with Pecorino Romano or nutritional yeast.
