  • ½ cup sour cream
  • cup oil (canola or vegetable oil work well)
  • 2 large eggs
  • 2 lemons (zest)

Method
 

  1. In a large mixing bowl, combine the Hungry Jack Wheat Blends Pancake & Waffle Mix and the water. Stir gently until just combined. It’s okay if there are a few lumps; overmixing can lead to dense waffles.
  2. In a separate bowl, whisk together the sour cream, oil, and eggs. Once well combined, add the lemon zest for that vibrant flavor. Pour this mixture into the dry ingredients and gently fold until just incorporated.
  3. While your batter rests for a few minutes, preheat your waffle maker according to the manufacturer’s instructions. A hot waffle maker ensures a crispy exterior.
  4. Lightly grease the waffle maker with a bit of oil or cooking spray. Pour the recommended amount of batter into the preheated waffle maker—usually about ½ to ¾ cup, depending on the size of your maker. Close the lid and cook according to the manufacturer’s instructions, typically 4-5 minutes, or until the waffles are golden brown.
  5. Once cooked, carefully remove the waffles from the waffle maker using a spatula. Serve immediately, topped with fresh berries, a dusting of powdered sugar, and a generous drizzle of Hungry Jack Microwavable Syrup. Enjoy your delightful Lemon Waffles!
