Ingredients
  

  • 1 tablespoon olive oil for drizzling
  • 1 pound chicken breast cut into strips
  • 4 tablespoons butter melted
  • 1/4 cup buttermilk for marinating
  • 1 oz Mediterranean veggie chips crushed, I used Terra brand
  • 2 teaspoons seasoned salt
  • 2 teaspoons pepper

Equipment

  • Baking sheet
  • Mixing bowls
  • Meat mallet or rolling pin
  • Cooking Spray

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a mixing bowl, combine the melted butter and buttermilk. Dip each chicken strip into the mixture, coating well.
  3. Crush the Mediterranean veggie chips into smaller pieces using a meat mallet or rolling pin.
  4. Mix the crushed vegetable chips with seasoned salt and pepper in a shallow dish.
  5. Dredge each buttermilk-coated chicken strip in the crushed vegetable chip mixture, pressing down to ensure a good coating.
  6. Place the coated chicken strips on a baking sheet lined with parchment paper. Drizzle with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until cooked through and the coating is golden brown.
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
