Ingredients
  

  • 2 large eggs
  • 1 cup milk unsweetened vanilla almond milk
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar for batter
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon cinnamon for batter
  • 1 teaspoon vanilla extract
  • pinch salt optional
  • 1/2 cup unsalted butter for coating pans
  • 1/2 cup granulated sugar for cinnamon sugar coating
  • 1 teaspoon cinnamon for topping

Method
 

  1. Preheat your oven to 425°F (220°C). This high temperature is crucial for the popovers to rise properly.
  2. Use your basting brush to generously coat each cup of the popover pan with melted unsalted butter.
  3. In a mixing bowl, whisk together the eggs and milk until well combined. Add flour, sugar, melted butter, cinnamon, vanilla extract, and salt. Whisk until smooth; a few lumps are okay.
  4. Pour the batter into each cup of the prepared popover pan, filling them about 2/3 full.
  5. Bake for 15-20 minutes, or until puffed up and golden brown.
  6. While baking, mix sugar and cinnamon in a small bowl for coating.
  7. Once done, brush the popovers with melted butter and roll them in the cinnamon sugar mixture.
  8. Enjoy warm, best eaten fresh!

  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • Freeze cooled popovers for up to a month; reheat in the oven.
