Instructions:
- Step 1: Preheat your oven to 350°F (175°C) and grease your 9x13 inch baking pan or line it with parchment paper for easy removal.
- Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Step 3: In another bowl, mix together the oil, eggs, vanilla extract, milk, and sour cream until smooth.
- Step 4: Pour the wet ingredients into the dry ingredients and stir until just combined. Then, carefully add the boiling water to the mixture and stir until the batter is smooth and well combined.
- Step 5: Pour the batter into the prepared baking pan and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 6: Once the cake is baked, remove it from the oven and sprinkle the mini marshmallows evenly over the top. Return the cake to the oven for an additional 5 minutes or until the marshmallows are puffed and slightly golden.
- Step 7: While the marshmallows are baking, prepare the frosting. In a saucepan over medium heat, melt the butter. Once melted, stir in the 6 tablespoons of milk, cocoa powder, and vanilla extract. Bring to a gentle simmer, then remove from heat and whisk in the powdered sugar until smooth and creamy.
- Step 8: Once the marshmallows are ready, remove the cake from the oven again and let it cool slightly. Pour the chocolate frosting over the warm marshmallow layer, spreading it evenly with a spatula.
- Step 9: Allow the cake to cool completely in the pan before slicing it into squares and serving.
Notes
- Use high-quality cocoa powder for the best chocolate flavor.
- Make sure to measure your ingredients accurately; baking is a science!
- Don’t skip the boiling water; it really enhances the chocolate flavor and creates a moist cake.
- Let the cake cool completely before frosting to prevent the frosting from melting.
