Ingredients
  

  • 2 cups rolled oats
  • 1 teaspoon kosher salt
  • 1/3 cup coconut sugar, cane sugar, or brown sugar
  • 2 large eggs
  • 1 14-oz can full-fat coconut milk
  • 1 teaspoon pure vanilla extract (optional)
  • 2 cups fresh mixed berries (like blueberries, raspberries, or strawberries)
  • 1 Honeycrisp apple peeled and finely chopped

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the rolled oats, kosher salt, and coconut sugar.
  3. Step 3: In another bowl, whisk together the eggs, full-fat coconut milk, and vanilla extract (if using).
  4. Step 4: Pour the wet mixture into the bowl with the dry ingredients and stir until just combined.
  5. Step 5: Gently fold in the fresh mixed berries and the finely chopped Honeycrisp apple.
  6. Step 6: Lightly grease your baking dish and pour the oatmeal mixture into the dish, spreading it evenly.
  7. Step 7: Bake for 30-35 minutes, or until the top is golden brown and set.
  8. Step 8: Allow to cool, slice into squares, and serve warm.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze individual portions for up to 3 months.
  • Reheat in the microwave for 1-2 minutes or in the oven at 350°F (175°C).
