In a large mixing bowl, add the quick cooking oats, optional vanilla protein powder, mini chocolate chips, and mini M&Ms. Stir until well mixed.
In a separate bowl, combine the creamy peanut butter and maple syrup. Mix until the mixture is smooth and well combined.
Pour the peanut butter mixture into the bowl with the dry ingredients. Use a spatula or spoon to mix everything together until all the dry ingredients are fully coated.
Once everything is well mixed, use your hands to scoop out small portions of the mixture and roll them into balls about 1 inch in diameter.
Place the rolled energy balls on a cookie sheet or plate and pop them in the refrigerator for about 30 minutes. This will help them firm up nicely.
