Ingredients
  

  • 2 cups quick cooking oats
  • 1 cup creamy peanut butter
  • 3 tablespoons maple syrup
  • ½ cup vanilla protein powder (optional)
  • ½ cup mini semi-sweet chocolate chips
  • ½ cup mini M&Ms

Method
 

  1. In a large mixing bowl, add the quick cooking oats, optional vanilla protein powder, mini chocolate chips, and mini M&Ms. Stir until well mixed.
  2. In a separate bowl, combine the creamy peanut butter and maple syrup. Mix until the mixture is smooth and well combined.
  3. Pour the peanut butter mixture into the bowl with the dry ingredients. Use a spatula or spoon to mix everything together until all the dry ingredients are fully coated.
  4. Once everything is well mixed, use your hands to scoop out small portions of the mixture and roll them into balls about 1 inch in diameter.
  5. Place the rolled energy balls on a cookie sheet or plate and pop them in the refrigerator for about 30 minutes. This will help them firm up nicely.

Notes

  • These energy balls can be stored in an airtight container in the refrigerator for up to one week.
  • For longer storage, freeze them for up to three months.
  • Thaw frozen energy balls in the refrigerator overnight before enjoying.
