Begin by pitting the dates if they aren't already pitted. Soak them in warm water for about 10 minutes to soften them up.
In a food processor, combine the soaked dates (drained) and the almond meal. Pulse until the mixture is well combined and starts to form a sticky dough.
Add in the grated coconut and minced almonds. Pulse again until everything is mixed well.
Gently fold in the dark chocolate chips using a spatula.
Using your hands, scoop out small portions of the mixture and roll them into balls or flatten them slightly into cookie shapes.
Refrigerate the cookies for at least 30 minutes to help them firm up.
