Directions:
- Start by pitting the dates and soaking them in warm water for about 5 to 10 minutes. This makes them soft and easier to blend. Drain and set aside.
- In a food processor, combine the soaked dates, rolled oats, chia seeds, sunflower seeds, and raw pistachios. Pulse until the mixture begins to come together but still retains some texture.
- Add the fresh lemon juice, lemon zest, almond extract, and ground turmeric to the mixture. Pulse again until all ingredients are well incorporated and the mixture forms a sticky dough.
- Transfer the mixture to a mixing bowl and fold in the shredded coconut until evenly distributed.
- Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet or plate lined with parchment paper.
- Refrigerate the energy bites for at least 30 minutes to firm up. Once chilled, they’re ready to be enjoyed! Store any leftovers in an airtight container in the fridge for up to a week.
