- Step 1: Prepare the Cinnamon Sugar - In a small bowl, mix together the 4 tablespoons of sugar and 1 teaspoon of ground cinnamon. Set this aside.
- Step 2: Combine Dry Ingredients - In a large mixing bowl, whisk together the self-raising flour, baking powder, 2 tablespoons of sugar, 1 teaspoon of ground cinnamon, and salt until well blended.
- Step 3: Mix Wet Ingredients - In another bowl, combine the melted butter, egg, vanilla extract, and milk. Whisk until everything is nicely incorporated.
- Step 4: Combine Wet and Dry Ingredients - Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
- Step 5: Heat the Skillet - Place your skillet or griddle over medium heat and lightly grease it with butter or oil.
- Step 6: Cook the Pancakes - Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface.
