  • 1 1/3 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder preferably aluminum-free
  • 1/4 teaspoon baking soda
Wet Ingredients
  • 3/4 cup extra-virgin olive oil fruity
  • 3/4 cup whole or low-fat milk
  • 2 large eggs at room temperature
  • 1 teaspoon freshly grated orange zest
  • 1/3 cup mixed fresh orange juice and Grand Marnier

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). This ensures that your muffins bake evenly.
  2. Step 2: Line a muffin tin with paper liners or lightly grease it with cooking spray.
  3. Step 3: In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  4. Step 4: In another bowl, combine the olive oil, milk, eggs, orange zest, and orange juice with Grand Marnier. Whisk until smooth.
  5. Step 5: Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula.
  6. Step 6: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Step 7: Bake for about 18-22 minutes, or until a toothpick inserted comes out clean.
  8. Step 8: Allow to cool in the tin for a few minutes before transferring to a cooling rack.
