- In a skillet, heat the olive oil over medium heat. Once hot, add the thinly sliced garlic. Sauté for about 1 minute, or until fragrant but not browned.
- Next, add the cleaned spinach to the skillet. Sprinkle with 1/8 teaspoon of salt and 1/8 teaspoon of pepper. Cook the spinach until wilted, stirring occasionally, about 2-3 minutes. Once done, transfer the spinach and garlic to a plate and set aside.
- In the same skillet, crack the 4 eggs carefully. Season with the remaining salt and pepper. Cook until the whites are set but the yolks remain runny, about 2-3 minutes. For over easy eggs, gently flip the eggs and cook for an additional 30 seconds to 1 minute.
- While the eggs are cooking, combine the crumbled feta and Greek yogurt in a small bowl. Mix well until creamy and smooth. Adjust seasoning if necessary.
- To serve, place a generous helping of the sautéed spinach on a plate. Top it with the over easy eggs and spoon the creamed feta mixture over the top.
