Ingredients
  

For the Banana Bread:
  • 2 large ripe bananas (about 1 cup mashed)
  • 3 tablespoons pure maple syrup
  • 3 large eggs
  • 2 cups super fine almond flour
  • 1/2 cup raw cacao powder or unsweetened cocoa powder
  • 1 tablespoon ground cinnamon
  • 1 tablespoon instant coffee granules (optional)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2/3 cup dark chocolate chips

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: Grease your loaf pan with coconut oil or line with parchment paper.
  3. Step 3: In a large mixing bowl, mash the ripe bananas until smooth (about 1 cup).
  4. Step 4: Add maple syrup and eggs to the mashed bananas and whisk until smooth.
  5. Step 5: In another bowl, mix almond flour, cacao powder, cinnamon, coffee granules (if using), baking soda, and sea salt.
  6. Step 6: Gradually combine the dry ingredients into the wet ingredients, mixing gently.
  7. Step 7: Fold in the dark chocolate chips until evenly distributed.
  8. Step 8: Pour the batter into the prepared loaf pan and smooth the top.
  9. Step 9: Bake for 45-55 minutes, or until a toothpick comes out clean.
  10. Step 10: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas for best flavor and sweetness.
  • Add chocolate protein powder for an extra chocolatey kick.
  • Cover with foil if the top browns too quickly.
  • This bread is great for meal prep; make ahead for quick snacks.
