Ingredients
  

  • 1/4 cup vegetable oil
  • 1 tablespoon minced garlic
  • 1/2 cup Panko bread crumbs or Italian bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 4 pieces chicken breasts pounded to equal thickness

Method
 

  1. Start by ensuring your chicken breasts are pounded to an even thickness, about 1/2 inch thick.
  2. In a mixing bowl, combine the Panko bread crumbs, grated Parmesan cheese, garlic powder, and salt. Stir until well combined.
  3. In a large frying pan, heat the vegetable oil over medium heat until hot.
  4. Take each chicken breast, dip it into the minced garlic first, then press it into the breadcrumb mixture for a generous coating.
  5. Carefully place the coated chicken breasts in the pan and fry for about 5-7 minutes on each side until golden brown and cooked through.
  6. Transfer cooked chicken to a paper towel-lined plate to absorb excess oil. Allow to rest a few minutes before slicing.

Notes

  • For a healthier option, use whole wheat Panko breadcrumbs.
  • Swap vegetable oil for olive oil for added flavor.
  • Freshly grated Parmesan cheese enhances the taste.
