Ingredients
  

For the Fries:
  • 4 large Russet potatoes cut into strips
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1/4 cup white truffle oil use sparingly
  • 1 tablespoon fresh parsley chopped
  • to taste sea salt
  • to taste fresh cracked pepper

Method
 

Cooking Instructions:
  1. Start by peeling the potatoes if you prefer. Cut the potatoes into even-sized strips, about 1/4 inch thick. Rinse them in cold water to remove excess starch.
  2. Soak the cut fries in cold water for at least 30 minutes, or up to an hour.
  3. In a large pot, heat enough oil for deep frying to 350°F (175°C).
  4. Carefully add the soaked fries in batches and fry for about 4-5 minutes or until golden and crispy.
  5. Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season with sea salt and fresh cracked pepper.
  6. In a mixing bowl, combine the hot fries with grated Parmesan cheese and drizzle with white truffle oil. Toss gently to coat.
  7. Transfer the fries to a serving platter and enjoy immediately.

Notes

  • Soak the fries for maximum crispiness.
  • Do not overcrowd the pot while frying.
  • Use a thermometer to ensure the oil is at 350°F.
