Ingredients
  

For the Crust:
  • 1 cup graham cracker crumbs
  • 1 cup sugar divided
  • 1 teaspoon ground cinnamon
  • 5 tablespoons butter (salted or unsalted), melted
For the Filling:
  • 24 oz regular cream cheese (3 x 8-ounce packages) at room temperature
  • 3 large eggs
  • 1 cup heavy cream
  • ¾ cup unsweetened passion fruit juice + 2 tablespoons extra
  • ¼ cup water
  • 1 teaspoon unflavored gelatin
For the Topping:
  • 3 tablespoons sugar (for topping)
  • ¼ cup heavy cream (for topping)
  • 1 tablespoon unsweetened passion fruit juice (for topping)

Method
 

Step 1: Prepare the Crust
  1. Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and ground cinnamon in a mixing bowl. Add melted butter, mix well, and press into the bottom of the springform pan. Bake for 10 minutes, then cool.
Step 2: Make the Cheesecake Filling
  1. Beat cream cheese until smooth. Gradually add sugar, mixing well. Add eggs one at a time, then add heavy cream and passion fruit juice. Mix until smooth.
Step 3: Bake the Cheesecake
  1. Pour the filling over the cooled crust. Bake for 55-60 minutes until edges are set. Cool in the oven for an hour, then refrigerate for at least 4 hours.
Step 4: Prepare the Passion Fruit Topping
  1. Combine water and gelatin in a saucepan. Heat until dissolved. Mix with passion fruit juice and sugar until smooth. Cool slightly and pour over cheesecake.
Step 5: Whip the Cream for Topping
  1. Whip heavy cream until soft peaks form. Add passion fruit juice and mix. Spread over the cheesecake.
Step 6: Chill and Serve
  1. Chill the cheesecake for an additional 30 minutes. Remove sides of the pan, slice, and enjoy!

Notes

  • For a lighter version, use low-fat cream cheese.
  • Substitute sugar with a sugar alternative like stevia for a lower-calorie option.
  • Store tightly covered in the fridge for up to 5 days.
