Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and ground cinnamon in a mixing bowl. Add melted butter, mix well, and press into the bottom of the springform pan. Bake for 10 minutes, then cool.
Step 2: Make the Cheesecake Filling
- Beat cream cheese until smooth. Gradually add sugar, mixing well. Add eggs one at a time, then add heavy cream and passion fruit juice. Mix until smooth.
Step 3: Bake the Cheesecake
- Pour the filling over the cooled crust. Bake for 55-60 minutes until edges are set. Cool in the oven for an hour, then refrigerate for at least 4 hours.
Step 4: Prepare the Passion Fruit Topping
- Combine water and gelatin in a saucepan. Heat until dissolved. Mix with passion fruit juice and sugar until smooth. Cool slightly and pour over cheesecake.
Step 5: Whip the Cream for Topping
- Whip heavy cream until soft peaks form. Add passion fruit juice and mix. Spread over the cheesecake.
Step 6: Chill and Serve
- Chill the cheesecake for an additional 30 minutes. Remove sides of the pan, slice, and enjoy!
