Ingredients

For the Oatmeal:
  • 2 very ripe bananas mashed for natural sweetness
  • 1/4 cup peanut butter creamy or crunchy, your choice
  • 3 cups milk any type, including non-dairy alternatives
  • 3 tablespoons Truvia Brown Sugar Blend for added sweetness without the calories
  • 1 teaspoon cinnamon for warmth and flavor
  • 1 teaspoon vanilla extract to enhance the overall taste
  • 2 tablespoons flax seed optional, but a great source of omega-3 fatty acids
  • 1 cup steel cut oats for a hearty texture
  • Bananas for topping fresh slices to add on top before serving
  • Truvia Brown Sugar Baking Blend for topping a sprinkle for an extra touch of sweetness

Equipment

  • Crockpot
  • Mixing Bowl
  • Measuring cups and spoons
  • Spatula or wooden spoon
  • Serving bowls

Method

Instructions
  1. In a mixing bowl, mash the very ripe bananas until smooth. This will help distribute their sweetness evenly throughout the oatmeal.
  2. Add the peanut butter, milk, Truvia Brown Sugar Blend, cinnamon, vanilla extract, flax seed, and steel cut oats to the bowl with the mashed bananas. Stir everything together until well combined.
  3. Pour the mixture into your crockpot, spreading it out evenly. Make sure to scrape the sides of the bowl to get every last bit of that delicious mixture.
  4. Cover the crockpot with the lid, set it to low heat, and cook for about 6-8 hours. This is perfect for overnight cooking, so you can wake up to a warm breakfast.
  5. Once cooked, give the oatmeal a good stir. Serve it warm in bowls, topped with fresh banana slices and a sprinkle of Truvia Brown Sugar Baking Blend for that extra sweetness!
