Ingredients
  

  • 24 oz cream cheese or vegan cream cheese
  • 1 cup peanut butter
  • 1 cup yogurt
  • 2 tsp pure vanilla extract
  • 1 tbsp cornstarch
  • 2/3 cup sugar or pure maple syrup or xylitol
  • 1 optional crust of choice graham cracker or gluten-free

Preparation
  1. Step 1: Prepare the crust (optional). If using, press a graham cracker crust into the bottom of your springform pan and set aside.
  2. Step 2: Preheat the oven to 325°F (160°C).
  3. Step 3: In a large mixing bowl, combine the cream cheese and peanut butter. Beat on medium speed until smooth and creamy.
  4. Step 4: Add yogurt and vanilla extract to the mixture and beat until fully incorporated.
  5. Step 5: Gradually add sugar and cornstarch, mixing until smooth.
  6. Step 6: Pour the filling into the prepared springform pan and smooth the top.
  7. Step 7: Bake for 50-60 minutes, until the edges are set and the center has a slight jiggle. Let cool in the oven with the door slightly open for about an hour.
  8. Step 8: Refrigerate for at least 4 hours or overnight.

Notes

  • Ensure cream cheese is at room temperature for a smooth filling.
  • Don’t overmix after adding eggs to prevent cracks.
  • Consider adding melted chocolate for extra flavor.
