Ingredients

  • 10-11 cups popped popcorn
  • 1 cup honey
  • 2/3 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1-2 cups Reese’s Pieces optional

Equipment

  • Large mixing bowl
  • Medium Saucepan
  • Spatula
  • Baking sheet
  • Parchment paper

Method

  1. Start by popping your popcorn. You can use an air popper, stovetop method, or microwave—just ensure you have about 10-11 cups of popped popcorn ready to go.
  2. In a medium saucepan over medium heat, combine the honey, granulated sugar, and creamy peanut butter. Stir continuously until the mixture is smooth and starts to bubble, about 2-3 minutes.
  3. Remove the saucepan from heat and stir in the vanilla extract. This step adds a wonderful flavor to your Peanut Butter Popcorn.
  4. In a large mixing bowl, pour the popped popcorn. Carefully drizzle the warm peanut butter mixture over the popcorn. Use a spatula to gently fold the popcorn, ensuring each piece is coated evenly.
  5. If you’re using Reese’s Pieces or any other mix-ins, now is the time to fold them into the popcorn mixture.
  6. Transfer the coated popcorn onto a baking sheet lined with parchment paper. Spread it out evenly to allow it to cool and set.
  7. Once cooled, break apart the popcorn into clusters and serve in bowls or store in an airtight container for later.

Notes

  • Store in an airtight container at room temperature for up to a week.
  • For longer storage, consider freezing the popcorn in a freezer-safe bag.
  • Avoid exposing the popcorn to moisture, as this can make it soggy.
