  • 2 lbs carrots sliced
  • 3 Tbsp avocado oil or extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp black pepper

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is essential for achieving that perfect caramelization on the carrots.
  2. Wash and peel the carrots. Slice them into even pieces, about 1 to 2 inches long. This ensures they cook evenly.
  3. In a large mixing bowl, combine the sliced carrots with avocado oil, sea salt, garlic powder, dried oregano, and black pepper. Toss everything together until the carrots are well-coated.
  4. Spread the seasoned carrots onto the baking sheet in an even layer. Make sure they are not overcrowded, as this will prevent them from roasting properly.
  5. Place the baking sheet in the preheated oven and roast the carrots for about 25-30 minutes. Stir them halfway through for even cooking. The carrots should be tender and slightly caramelized when done.
  6. Remove the carrots from the oven and let them cool for a couple of minutes. Serve them warm as a delightful side dish to complement your meal!

  • For extra sweetness, consider adding a drizzle of honey or maple syrup during the last 5 minutes of roasting.
