Ingredients

For the Crust:
  • 3 cups graham cracker crumbs
  • 1/3 cup unsalted butter melted
For the Filling:
  • 6.8 oz pistachio pudding mix
  • 2 3/4 cups whole milk
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 16 oz whipped topping divided
  • 1/4 cup M&Ms red and green

Equipment

  • Mixing bowls
  • Whisk
  • Spatula
  • 9x13 inch baking dish

Method

Instructions:
  1. In a large bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9x13-inch baking dish to form a crust.
  2. In another bowl, whisk together the pistachio pudding mix and whole milk. Continue whisking until the mixture thickens, about 2 minutes.
  3. In a separate mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  4. Gently fold the thickened pistachio pudding into the cream cheese mixture until fully combined.
  5. Fold in 12 oz of the whipped topping into the pudding mixture until well incorporated.
  6. Spread the pistachio mixture evenly over the graham cracker crust in the baking dish.
  7. Refrigerate the dessert for at least 4 hours, or until set.
  8. Before serving, spread the remaining whipped topping over the dessert and sprinkle with M&Ms for a festive touch. Cut into squares and enjoy!

Notes

  • Make sure the cream cheese is softened to room temperature for easy mixing.
  • For an extra touch, consider adding crushed pistachios on top along with the M&Ms.
  • Letting the dessert chill overnight enhances the flavors and allows it to set properly.
  • This dessert can be made a day in advance, making it a perfect make-ahead treat.
