Ingredients
  

For the Quesadillas:
  • 8 pieces flour tortillas 8-inch
  • 1 cup grated sharp cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • 1 cup cooked black beans rinsed and drained
  • 1 red bell pepper stemmed, seeded, and diced
  • 4 scallions thinly sliced
  • 1 cup corn kernels thawed if frozen
  • 2 jalapeño peppers thinly sliced
Toppings:
  • homemade salsa or salsa verde fresh and zesty
  • pico de gallo refreshing chopped tomato salsa
  • guacamole creamy and rich
  • sour cream adds a cool creaminess
  • chopped fresh cilantro for a burst of freshness

Method
 

Cooking Steps:
  1. Start by prepping all your ingredients. Grate the cheeses, dice the red bell pepper, slice the scallions and jalapeños, and rinse the black beans.
  2. Place a non-stick skillet over medium heat and let it warm up.
  3. On one half of a tortilla, layer a generous amount of cheddar and Monterey Jack cheese, followed by the black beans, diced bell pepper, sliced scallions, corn, and jalapeños. Sprinkle more cheese on top before folding the tortilla in half.
  4. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Flip it gently and cook the other side for an additional 3-4 minutes until golden and the cheese is melted.
  5. Transfer the quesadilla to a cutting board, let it cool for a minute, then slice it into wedges. Serve immediately with your choice of salsa, guacamole, sour cream, and chopped cilantro.

  • Feel free to use different types of cheese for varied flavors!
  • Try adding other vegetables like spinach or mushrooms for extra nutrition.
