- Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure your cakes come out easily after baking.
- Step 2: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set this mixture aside as you prepare the wet ingredients.
- Step 3: In a large mixing bowl, beat the room temperature butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Step 4: Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream until fully combined.
- Step 5: Next, add the mashed bananas and fresh lemon juice to the mixture. Beat until well blended, and the batter is smooth.
- Step 6: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix! Gently fold in the mini Reeses peanut butter cups, reserving 12 for topping the cake.
- Step 7: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
- Step 8: In a large mixing bowl, beat the cream cheese and unsalted butter together until smooth. Add in the peanut butter and mix until fully incorporated. Gradually add the powdered sugar, mixing until well combined. Finally, add the heavy whipping cream and beat until the frosting is fluffy.
- Step 9: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of peanut butter cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
