- Step 1: Roast the Garlic - Preheat your oven to 400°F (200°C). Peel the garlic cloves, place them in a roasting pan, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes until golden and soft. Set aside to cool.
- Step 2: Cook the Lentils - In a large pot, combine split red lentils and water or vegetable stock. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until lentils are soft.
- Step 3: Blend the Ingredients - Squeeze roasted garlic into a blender, add cooked lentils (with liquid), lemon juice, parsley, salt, pepper, and olive oil. Blend until smooth.
- Step 4: Adjust Seasoning - Taste the dip and adjust seasoning with lemon juice or salt as needed.
- Step 5: Serve and Enjoy - Transfer to a bowl, drizzle with olive oil, garnish with parsley, and serve with veggies or pita chips.
Notes
- Store leftovers in an airtight container in the fridge for up to 5 days.
- Freeze for up to 3 months; thaw overnight in the fridge before serving.
