Ingredients
  

For the Bowls:
  • 1 cup uncooked jasmine rice
  • 1 pound lean ground beef
  • 3 tablespoons brown sugar
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon freshly ground ginger
  • 4 green onions, thinly sliced
  • 1 carrot, freshly grated
  • 1 zucchini squash, spiralized
  • 1 to 2 tablespoons sesame seeds for topping

Method
 

Directions:
  1. Start by rinsing the jasmine rice under cold water to remove excess starch. In a medium pot, combine 1 cup of rice with 2 cups of water. Bring to a boil, then cover and reduce the heat to low. Let it simmer for about 15 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it stand, covered, for another 5 minutes before fluffing with a fork.
  2. While the rice is cooking, heat a large skillet or wok over medium-high heat. Add the lean ground beef and cook until browned, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary.
  3. Once the beef is cooked through, stir in the brown sugar, low sodium soy sauce, toasted sesame oil, chili garlic sauce, and freshly ground ginger. Mix well and let it simmer for about 3-5 minutes, allowing the flavors to meld together.
  4. Add the thinly sliced green onions, grated carrot, and spiralized zucchini to the beef mixture. Cook for an additional 2-3 minutes, just until the vegetables are tender but still vibrant.
  5. To serve, divide the fluffy jasmine rice among serving bowls. Top each bowl with the savory beef and vegetable mixture. Finish with a sprinkle of sesame seeds for an added crunch and flavor.

Notes

  • Substitute ground beef with ground turkey or chicken for a leaner option.
  • Use brown rice or quinoa for a whole grain alternative to jasmine rice.
  • Adjust the chili garlic sauce to control the heat level.
