Ingredients
  

  • 1 medium Red onion sliced into thin wedges
  • 3 pieces Bell peppers mixed colors
  • 2 Tbsp Olive oil
  • to taste Salt and Pepper for seasoning
  • 1 tsp Hot chili powder or flakes adjust based on spice preference
  • 1 Tbsp Sweet smoked paprika powder
  • 1 tsp Ground cumin seeds
  • 1 tsp Garlic powder
  • 1 tsp Oregano

Equipment

  • Large mixing bowl
  • Sheet pan
  • Sharp knife
  • Cutting board
  • Spatula or wooden spoon

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Slice the red onion into thin wedges and chop the bell peppers into strips.
  3. In a large mixing bowl, combine the sliced vegetables with olive oil, salt, pepper, hot chili powder or flakes, smoked paprika, ground cumin, garlic powder, and oregano. Toss until well coated.
  4. Spread the seasoned vegetables out in a single layer on the sheet pan.
  5. Place the sheet pan in the preheated oven and roast for about 20-25 minutes, stirring halfway through.
  6. Once the veggies are roasted, remove from the oven and serve warm.

Notes

  • These fajita veggies can be frozen for up to three months.
  • Try adding cooked protein like chicken or tofu for a complete meal.
  • Don’t skip the seasoning for the best flavor!
