Ingredients
  

  • 6 pieces chicken drumsticks (skin removed, optional breast fillets for extra protein)
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 1 clove garlic (minced)
  • 14.5 ounces diced tomatoes (canned or homemade)
  • 2 teaspoons capers (drained)
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper flakes
  • to taste Kosher or sea salt
  • 0.5 teaspoon freshly ground pepper
  • 3/4 cup fat-free, low-sodium chicken broth
  • 1 cup dry quinoa (pre-rinsed)

Method
 

  1. Start by heating the olive oil in a large skillet over medium-high heat. Season the chicken drumsticks with salt and pepper. Once the oil is hot, add the chicken to the skillet, browning each side for about 5-7 minutes until golden brown. Remove the chicken and set it aside.
  2. In the same skillet, add the diced onion. Sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Pour in the diced tomatoes along with their juices. Stir in the capers, oregano, crushed red pepper flakes, and additional salt and pepper to taste. Bring the mixture to a simmer.
  4. Add the rinsed quinoa and chicken broth to the skillet. Stir well to combine all ingredients. Return the chicken drumsticks to the skillet, nestling them into the quinoa mixture.
  5. Cover the skillet and reduce the heat to low. Let it simmer for about 25-30 minutes, or until the quinoa is cooked and the chicken is tender. Check occasionally to ensure nothing is sticking to the bottom of the pan.
  6. Once everything is cooked through, give the dish a gentle stir to fluff the quinoa. Serve hot, garnished with fresh herbs if desired, and enjoy your Skillet Chicken & Quinoa Supper!
