Ingredients
  

  • 1 pound whole grain penne pasta
  • 1 jar marinara sauce (24-25 ounce jar, no sugar added)
  • 15 ounces diced tomatoes (optional)
  • 1 pound boneless and skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup skim mozzarella cheese (shredded)
  • 1/2 cup whole wheat Panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (optional)

Method
 

  1. Preheat your oven to 375°F (190°C). This will ensure that your Skinny Chicken Parmesan Casserole bakes evenly.
