Ingredients
  

For the Smashed Potatoes:
  • 2 pounds baby red potatoes
  • 3 tablespoons butter melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • 1 tablespoon Fresh parsley chopped (for garnish)

Method
 

Instructions
  1. Step 1: Boil the Potatoes - Place the baby red potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil, then simmer for about 15-20 minutes until fork-tender.
  2. Step 2: Preheat the Oven - Preheat your oven to 425°F (220°C).
  3. Step 3: Drain and Smash - Drain the potatoes, place on a baking sheet, and smash each potato to about half an inch thick.
  4. Step 4: Seasoning Mixture - Whisk together melted butter, olive oil, salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  5. Step 5: Drizzle and Roast - Drizzle the seasoning over the smashed potatoes and roast for 20-25 minutes until golden brown and crispy.
  6. Step 6: Garnish and Serve - Sprinkle with freshly chopped parsley and serve immediately.

  • For extra flavor, try adding fresh herbs like rosemary or thyme.
