Ingredients
  

For the Filling:
  • 10-12 noodles lasagna
  • 14 ounces artichoke hearts drained and chopped
  • 1 cup fresh spinach or 1 1/2 cups frozen spinach, thawed and drained
  • 2 cups cooked and shredded chicken breasts (optional)
  • 1 1/2 cups mayonnaise or Greek yogurt
  • 1 cup grated Parmesan cheese
  • 1 cup grated Monterey Jack cheese
  • 1 pinch garlic powder
  • 1 pinch kosher salt to taste

Method
 

Preparation Steps:
  1. Start by bringing a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain the noodles and lay them flat on a clean kitchen towel or parchment paper to cool.
  2. In a large mixing bowl, combine the chopped artichoke hearts, spinach, shredded chicken (if using), mayonnaise or Greek yogurt, grated Parmesan cheese, and grated Monterey Jack cheese. Add garlic powder and a pinch of kosher salt. Mix until everything is well combined and creamy.
  3. Preheat your oven to 375°F (190°C). Take one lasagna noodle and spread about 2-3 tablespoons of the filling along the length of the noodle. Carefully roll it up from one end to the other and place it seam-side down in the prepared baking dish. Repeat this process with the remaining noodles and filling.
  4. Once all the rolls are in the baking dish, cover the dish with aluminum foil. Bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  5. Once baked, remove the dish from the oven and let it cool for a few minutes before serving. You can garnish with extra Parmesan cheese or some fresh herbs if desired.

Notes

  • Drain the spinach thoroughly to avoid watery filling.
  • Customize the filling with your favorite ingredients like garlic or red pepper flakes.
  • Assemble the rolls a day ahead and store in the refrigerator before baking.
  • For a vegetarian version, omit the chicken and add more vegetables.
