  • 8 ounces uncooked pasta (penne or any shape)
  • 1/2 tablespoon olive oil
  • 2 pieces chicken breasts (cut into bite-size strips)
  • 1 cup chicken stock (homemade or store-bought)
  • 1 cup heavy/whipping cream
  • Salt & pepper (to taste)
  • Freshly grated parmesan cheese (optional)

Method
 

Instructions
  1. Step 1: Cook the Pasta - Bring a large pot of salted water to a boil. Add 8 ounces of uncooked pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Step 2: Sauté the Chicken - In a large skillet, heat 1/2 tablespoon of olive oil over medium heat. Add chicken strips, seasoning with salt and pepper. Cook for 5-7 minutes until golden brown.
  3. Step 3: Create the Sauce - Once the chicken is cooked, reduce heat to low and pour in 1 cup of chicken stock. Simmer for a couple of minutes, then add 1 cup of heavy cream and stir until thickened (2-3 minutes).
  4. Step 4: Combine Everything - Add the cooked pasta to the skillet and toss until well coated. If too thick, add a splash of chicken stock.
  5. Step 5: Serve and Garnish - Adjust seasoning as needed and serve warm, topped with freshly grated parmesan cheese if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • To reduce calories, use whole wheat or gluten-free pasta.
  • Add in your favorite vegetables for extra nutrition.
