Ingredients
  

For the Wings:
  • 2 pounds chicken wings and drumettes
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
For the Sauce:
  • 16 ounces pineapple juice
  • ½ cup rice vinegar
  • ½ cup brown sugar
  • ½ cup ketchup
  • 3 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Method
 

Instructions:
  1. Step 1: Prepare the Wings. Preheat your oven to 400°F (200°C). Pat the chicken wings dry with paper towels to remove excess moisture. In a large mixing bowl, combine the wings with baking powder and kosher salt, tossing until they are evenly coated.
  2. Step 2: Bake the Wings. Line a baking sheet with parchment paper. Spread the wings out in a single layer on the sheet. Bake for about 40-45 minutes, flipping halfway through, until golden brown and crispy.
  3. Step 3: Make the Sweet and Sour Sauce. In a saucepan over medium heat, combine pineapple juice, rice vinegar, brown sugar, ketchup, and soy sauce. Stir until the sugar dissolves and it starts to simmer.
  4. Step 4: Thicken the Sauce. In a small bowl, mix cornstarch and water until smooth. Gradually add to the saucepan, stirring until the sauce thickens, about 2-3 minutes. Remove from heat.
  5. Step 5: Coat the Wings. Once the wings are done baking, transfer them to a large bowl. Pour the sweet and sour sauce over the wings and toss until thoroughly coated.
  6. Step 6: Serve and Enjoy. Serve the wings hot, garnished with chopped green onions or sesame seeds if desired. Enjoy!
