Ingredients
  

  • 8 ounces unsalted butter softened
  • 1/2 cup powdered sugar
  • 1 1/4 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2/3 cup chopped walnuts
  • Extra powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened unsalted butter and powdered sugar. Cream together until light and fluffy, about 2-3 minutes.
  3. Stir in the vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder.
  5. Gradually add the dry mixture to the creamed butter and sugar. Mix until just combined.
  6. Gently fold in the chopped walnuts with a spatula.
  7. Drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes, until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a cooling rack and dust with extra powdered sugar.

Notes

  • For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
  • Experiment with different nuts, like pecans or almonds.
  • Store baked cookies in an airtight container at room temperature for up to one week.
