Ingredients

  • 1 head Cauliflower (small to medium-sized, yields 2 to 3 cups once processed)
  • 1/4 cup Parmesan cheese shredded
  • 1/4 cup Mozzarella cheese shredded
  • 1 large Egg
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Basil or rosemary (minced or dried)
  • 1/2 teaspoon Oregano (minced or dried)
  • 1 cup Marinara sauce
  • 1-2 cups Mozzarella cheese for topping

Equipment

  • Food processor
  • Mixing Bowl
  • Baking sheet
  • Parchment paper
  • Oven

Method

  1. Preheat your oven to 400°F (200°C). Remove the leaves and stem from the cauliflower, then cut it into florets. Place the florets in a food processor and pulse until they resemble rice or couscous.
  2. Transfer the processed cauliflower to a microwave-safe bowl and cover it. Microwave on high for about 4-5 minutes until tender. Allow it to cool for a few minutes before handling.
  3. Once the cauliflower is cool enough to handle, place it in a clean kitchen towel and twist it tightly to squeeze out as much moisture as possible. This step is crucial for achieving a crispy crust.
  4. In a mixing bowl, combine the drained cauliflower, Parmesan cheese, mozzarella cheese, egg, salt, garlic powder, basil, and oregano. Mix well until everything is fully incorporated.
  5. Line a baking sheet with parchment paper. Transfer the cauliflower mixture onto the parchment and press it into a round shape, about 1/4 to 1/2 inch thick.
  6. Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the crust is golden brown and firm to the touch.
  7. Once the crust is baked, remove it from the oven and spread a layer of marinara sauce over the top. Sprinkle with additional mozzarella cheese and your favorite toppings.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove the pizza from the oven, let it cool for a few minutes, then slice and serve. Enjoy your delicious, healthy cauliflower pizza!

Notes

  • For a dairy-free version, substitute Parmesan cheese with nutritional yeast.
  • Use flaxseed meal mixed with water as an egg replacement.
